These are a cross between pancakes and Welsh cakes. Best of all, they're quick to make and low in fat!

  • 2 eggs, beaten
  • 250g apple sauce or purée
  • 1 teaspoon ground cinnamon
  • 2 teaspoons caster sugar
  • 125g flour
  • 75g wholemeal flour
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 75g sultanas

  1. In a large mixing bowl, combine eggs, apple sauce, cinnamon, sugar, flour, baking powder, vanilla and sultanas. Form small cakes out of the batter.
  2. Heat a nonstick frying pan over medium heat, fry the cakes until both sides are browned, about 5 to 7 minutes.

A great after school healthy snack.-04 Mar 2014

Tasty but not quite sweet enough for the minnies tastes. A bit of honey drizzled over them sorted that out though. Lovely SUnday morning treat for breakfast.-19 Feb 2012
