In a very large pan I heated a tablespoon of oil and fried the bacon. When it browned, I took it out and put it in a bowl. I put a cube of butter in the same pan, and when it melted I added the boiled potatoes.

I mixed them from time to time, not very often, to let them brown evenly.

When they were fried, I put the bacon over the potatoes, I mixed them, then I poured the cream for cooking. I sprinkled salt, freshly ground pepper and 2 tablespoons finely grated Parmesan cheese. I mixed to homogenize the composition and left it on the fire until the sauce thickened and stuck to the potatoes.

I put them on my plate and sprinkled grated Parmesan cheese and a few chopped parsley threads.

Pan-fried carbonara potatoes are very tasty.

Spring has come with new dishes, including these new potatoes with sour cream sauce and baked goat cheese.

Like most Romanians, we are consumers of potatoes and I think they are on our table at least once a week.

The new potatoes with sour cream and dill remind me of my childhood, but also of the beginning of summer. This food was made by my mother at most twice a year, but regularly every year.

This time I chose a version with roots in childhood, but adapted to my spring wishes. The surprise elements are both goat cheese and greens of all kinds. Everything went in the oven for a creamier texture and better taste.

Ingredients 4 people:

  • 1.2 kg of new potatoes
  • 400 ml sour cream with fat over 25%
  • 100g LaColline goat cheese
  • 75g salted case (telemea)
  • 1 link parsley
  • 1 hasmatuchi connection
  • 3-4 green onions
  • salt pepper
  • chili flakes

How to prepare new potatoes with sour cream sauce and goat cheese:

Start the oven at 200g Celsius.

The new potatoes are washed well and cut into large cubes.

The greens are washed under running water, drained and finely chopped.

Put 2.5 l of salted water in a pot to boil. When the water boils, put the potatoes and leave them there for approx. 5 minutes. Drain well and mix with sour cream, shredded cheese, salt and pepper.

All the ingredients are mixed well and the composition is poured into a ceramic or Yena tray. Sprinkle chili flakes on top of the potatoes (optional).

Place the tray in the oven for approx. 30-35 minutes.

This new potato dish with sour cream and goat cheese is delicious. Spring greens bring freshness and an unmistakable taste, especially that given by hasmatuchi.

Potatoes are served hot with other meat dishes, salads or fish.

Layered new potato pudding is a delicious food that is prepared very quickly. Wash the potatoes, peel them and boil them whole. After they have boiled, cut the slices. Boil hard-boiled eggs, clean them and cut them horizontally.
Wash the peppers, clean them and cut them into strips, and cut the kaizer into cubes.
Place a layer of potatoes in a terracotta bowl greased with olive oil. Put the slices of bell pepper on top of them, then the kaizer cubes, the egg slices and on top again the potato slices.
Make a milk sauce with eggs and flour to which you add salt, pepper, chopped dill, crushed garlic, basil, oregano, mix well and pour over the layers in the bowl.

Finally sprinkle with grated cheese. Put the bowl with the new potato pudding in layers in the oven at the bottom and after 30 minutes lift the bowl on top for 15 minutes.

Layered new potato pudding is served while hot. It's delicious.


Method of preparation

Peel a squash, grate it and cut it into thick salted water.

Romanians like it to have on the table beautifully decorated for Christmas as many pork dishes. Toba, piftia, caltabosul, sarmalele, sausages and pork steak are the most common dishes on the menu for the winter holidays. Obviously we can find enough arguments against a menu that abounds in pork dishes, fatty and heavy, but it is everyone's choice after all. I will only offer you a slightly lighter pork steak recipe and a garnish to accompany it. We start with the garnish: baked potatoes with sour cream, wine and garlic. It is, in fact, a potato gratin, a kind of Gratin dauphinois, only it involves dry white wine, and on top we put grated Parmesan cheese, for an appetizing and tasty crust.

For the holiday meal, you can prepare the gratin beforehand and just heat it at the right time. If you don't have Parmesan cheese and you can't bear to spend too much money on it, you have the option of using a fatty and slightly hot cheese (like Dobrogea).

An even more consistent variant of baked potato garnish is the Gratin with Gruyere cheese and sage.

Ingredients (for 6 servings):
& # 8211 1.2 kg potatoes
& # 8211 butter 15 g
& # 8211 garlic 6 puppies (15 g)
& # 8211 liquid cream 200 ml
& # 8211 dry white wine 100 ml
